Bread Pudding with Lemon Sauce

  • 1/2 loaf (8 oz.) French bread (stale is okay)
  • 1 12 oz. can evaporated milk
  • 2 eggs
  • 1 teaspoon cinnamon
  • 1 cup sugar
  • 1 cup 2% or regular milk
  • 4 Tablespoons margarine or butter, melted

    Spray 8 x 8 x 2 pan* with non-stick spray. Pre-heat oven to 400 degrees.

    Tear bread into pieces about 1 - 2 inches in size and place into baking pan. In bowl, mix together the sugar, milks, eggs, and cinnamon. Pour mixture over bread pieces allowing bread to soak thoroughly. Pour melted margarine over mixture.

    Cook in center of oven 35 - 40 minutes. Prepare lemon sauce while bread pudding is cooking.

    *Note: If baking in glass baking dish, reduce heat to 375F and check in 30 minutes.

    Lemon Sauce

    • 1/3 cup lemon juice
    • 1/2 cup sugar
    • 1 Tablespoon cornstarch

      Mix together in small saucepan. Cook over low heat stirring until thickened. Spoon or pour over bread pudding while warm.
